Ice Glaze, the Percentage You Pay For and Never See

Ice Glaze, the Percentage You Pay For and Never See

Table of Contents

Net weight is one of the few numbers every buyer checks and one of the least meaningful on its own. On frozen product, part of that weight may be water frozen onto the surface to protect it.

Glaze has a legitimate job. It limits moisture loss and freezer burn during storage and transport. A moderate glaze is a quality measure, not a trick.

It also has a commercial edge. A stated percentage of protective ice is weight the buyer pays for at the contract price and does not recover after thawing. Whether that is fair depends entirely on whether the percentage was disclosed.

The practical rule is simple. If a specification does not state a glaze limit, the buyer has not specified the product, only the carton.

Two buyers can compare quotes on the same fruit, one at a stated 3 percent glaze and one undisclosed, and the apparent price difference may be nothing but water.

At NewsourceFoods, we quote with the glaze percentage written into the offer so price per kilo of thawed product can be calculated before the container is booked. We supply IQF product with OEM and ODM support, confirm loading per order within 18 to 25 tons per 40-foot container, and work under ISO, HACCP, BRC, IFS, KOSHER, and HALAL.

Next time you compare two offers, ask both for the glaze figure. We are comfortable being asked, and you may find the ranking changes once the water is out of the number.
