Two onion quotations, both IQF, both from the same origin, can differ by a margin that looks arbitrary until you read the cut size. Diced onion is not one product.
A 10 mm dice and a 3 mm dice come off different equipment settings, carry different knife wear costs, and lose different amounts of product to fines. Smaller cuts generate more fines, and fines are weight you paid for that your customer may screen out.
Cut size also decides how the onion behaves after thawing. A coarse dice holds texture longer in a cooked application. A fine dice disperses faster, which suits sauces and fillings but collapses sooner under heat.
Buyers who specify only “diced onion” leave that decision to whoever packs the container, and the result can change between lots without anyone intending it.
At NewsourceFoods, we ask for the cut size in millimeters and the application before quoting, because both affect yield on your side, not only appearance. We supply onion in IQF form with OEM and ODM support, so a private-label pack can carry your cut specification rather than a generic one. Loading capacity runs 18 to 25 tons per 40-foot container depending on pack and cut, and we confirm the actual figure per order instead of quoting a range and adjusting later. Certifications include ISO, HACCP, BRC, IFS, KOSHER, and HALAL.
Send us your current cut size and the application it goes into. We will quote against it, and flag it if another cut yields better.
