Pineapple Chunks, Brix, Drip Loss, and Thaw Behavior

Table of Contents

Pineapple is specified by Brix, and then it surprises buyers anyway, because Brix describes sugar and not what happens when the chunk thaws.

Two lots at the same Brix can behave differently on a dessert line. One holds its shape and releases little liquid. The other collapses and leaves a pool in the tray. The difference comes from ripeness at harvest, the freezing curve, and how much cellular water was released before freezing.

Drip loss is the number that predicts this, and it is rarely written into a purchase order.

There is a trade-off worth knowing. Fruit picked riper gives higher Brix and better flavor but loses structure faster after thaw. Fruit picked firmer holds shape but may need Brix adjustment to reach the target. A buyer choosing only the Brix number is choosing one side of that trade without knowing it.

At NewsourceFoods, we discuss both figures with pineapple buyers and state the intended application, because a chunk for a yogurt topping and a chunk for a cooked sauce have different right answers. We supply IQF pineapple with OEM and ODM support and confirm loading per order within 18 to 25 tons per 40-foot container. Certifications include ISO, HACCP, BRC, IFS, KOSHER, and HALAL.

Tell us the application and the Brix you need. We will quote to both, and mention any tension between them up front rather than after the first container.
